Freeze drying can really kill bacteria and fungus

The following is the information that guests who use our freeze dryer to give feedback to our company


I used a freeze dryer to preserve a large number of important strains of bacteria for research. I have received strains of bacteria that were freeze dried before shipping, they are a lot more resilient in this form than my preferred storage method (frozen at -85°C in glycerol). I know this method is used for yeasts, which are fungi, as well but I am not sure if it is possible for all types of fungi. The professor I was working under when I helped restock the stock culture collection said that freeze drying was one of the gentler forms of preservation for the organisms. Yes it will kill some and it will make most unable to actively multiply (good for preservation of food and/or organism) but I would not use it if your goal is killing the microorganisms.
