Freeze dryer, also known as vacuum freeze dryer, is a device that uses the principle of sublimation for drying. Its working principle mainly includes three stages: pre freezing, sublimation drying, and analytical drying. In the pre freezing stage, the material is frozen below the eutectic point, causing the moisture in the material to become solid. In the sublimation drying stage, the material is heated in a vacuum environment to directly sublimate solid water into water vapor and remove moisture from the material. In the analysis and drying stage, it is to further remove the adsorbed moisture in the material and improve the drying degree of the product.

Advantages of freeze-drying machines in the food industry:
Maintaining the nutritional content and taste of food: Freeze drying technology can be carried out at low temperatures, avoiding the damage of high temperatures to the nutritional content of food. During the freeze-drying process, water directly sublimates without producing liquid water, thus maintaining the taste, color, and shape of the food well.

Extending the shelf life of food: Freeze dried food has extremely low moisture content, making it difficult for microorganisms to survive, thereby extending the shelf life of food. Meanwhile, freeze-dried food can be stored at room temperature for convenient transportation and storage.

Convenient to eat and carry: Freeze dried foods have rehydration properties and can be restored to their original state after adding water, making them easy to consume. In addition, freeze-dried food has a small volume, light weight, and is easy to carry and store.

Freeze dried fruits and vegetables: Freeze drying technology is widely used in the drying of fruits and vegetables, such as freeze-dried strawberries, freeze-dried apple slices, freeze-dried vegetables, etc. Freeze dried fruits and vegetables not only retain their original nutritional components and taste, but also have a longer shelf life and convenient consumption methods.

Freeze dried meat: Freeze drying technology can also be used for drying meat, such as freeze-dried beef jerky, freeze-dried chicken, etc. Freeze dried meat has the characteristics of high protein, low fat, and crispy taste, which are deeply loved by consumers.

Freeze dried seafood: Freeze dried seafood such as freeze-dried shrimp, freeze-dried fish fillets, etc., have the characteristics of rich nutrition, delicious taste, and convenient carrying. Freeze drying technology can effectively preserve the original flavor of seafood and satisfy consumers' pursuit of delicious food.
