The homogenization index reached 5. Ultrasonic homogenized milk, high shear homogenized milk and heterogeneous milk are used to make yoghurt under the same formula and production process. The ultrasonic homogenized milk is more stable and easier to control than other two kinds of milk during fermentation.


The three kinds of yoghurt produced were tested by scoring. Among the four indicators of aroma, color, appearance and taste, the yoghurt after ultrasonic homogenization performed best in aroma and view.
